I have this:

v=spf1 a:entrian.com include:aspmx.googlemail.com ~all

which lets me send from my own server or from Google Apps.

Having said that, Hotmail is notorious for junking legitimate emails.
Don't assume that a correct SPF record will make the problem go away.
(I'm afraid I don't have more any practical advice... some people have
reported success after contacting Hotmail, but it was usually
temporary.)

How does one go about doing that, please? I'm in a similar (if not
the same) situation: any email I send to hotmail always appears in the
recipient's junk mail folder.

Cheers,
Chris
